What:

For nearly 10 years, the Peele Family of Herondale Farm in Ancramdale, NY has offered the highest quality pasture raised beef, pork, chicken, and lamb. Now Jack Peele - eldest son of Jeremy and Iva - has the dream to build a small commercial kitchen and "meat processing facility" on the farm so we can offer an awesome and delicious new range of products such as Italian salami, French saucisson sec, bacon and pancetta, prosciutto, and much much more.  This tasty charcuterie by Jack shall be called henceforth: JACüTERIE.   To start with JACüTERIE will be available at the Herondale Farm store as well as local farmers markets in the area as we expand our distribution network.  Soon enough these products will be available in local stores as well as on the web.  But first we have to get the equipment and obtain the necessary certification from the New York dept of Agriculture and Markets AND the USDA. To do this we need your help!  

Why:

In times past - before the invention of refrigeration - all meat was cured in salt so that it could be preserved and increase the shelf life for one or more years - allowing a family to live off one or two animals for an extremely long time.  One side effect of this process was the discovery that these cured products were also incredibly delicious.  When refrigeration was added to this equation people didn't stop eating charcuterie, but the model in which it was created changed.  No longer was it made on the farm to feed the farmers, or by local butchers for sale to the public, it was mass produced in factories in the middle of the country and shipped to every corner.  In so doing, chemicals and fillers were added to the meat so it could be processed quicker and cheaper, and in fact reducing shelf life, making a product that was no longer as delicious nor nutritious. 

The mission of JACüTERIE will be to return to the original practices, while using the technological advances we have today.  By locating the kitchen at Herondale Farm, where the animals are raised, we will be able to provide the best quality products and have complete control over the process from beginning to end. While the main focus of JACüTERIE will be on dry cured sausages such as salami as well as other cured meats,  the side benefit to Herondale Farm and all of it's customers will be the fact that a USDA certified facility will now exist on site. This will allow the current line of products such as fresh sausauge and the wonderful nitrate-free uncured bacon and ham to be made right on site with in house recipes.

As the customers of Herondale Farm already expect the highest quality sustainable products - they can look forward to having even MORE sustainable and more delicious products.

What We Need & What You Get

In order to make this happen we need your help so that we can build the kitchen and purchase the equipment we need to make the best and most delicious products we possible can.  We also need to build a climate controlled chamber in which to cure the dried sausages and other items that require controlled curing.

The following is a list of the equipment we need to purchase at the very minimum to start this venture.  

A Commercial Meat Grinder

A Commercial Meat Mixer

A Commercial Sausage Stuffer

A Smoker capable of cold smoking up to 100 lbs 

With your help we will be able to get these essential items, but also much more including things like work tables, fridges, meat lugs, thermometers, and shelving.

The funds will also help us with the construction costs so we can create a room that meets the standards of both the NY Dept. of Agriculture and Markets and the USDA. In turn, this will enable us to sell these wonderful items both on the farm as well as in other stores in the area.

We are going to offer some wonderful items including stickers, tote bags, and T-shirts as well as gift certificates that can be used to purchase items when the facility is complete to those who contribute.  The Perks are listed in full at the bottom as well as in the perk list to the right:

If we are unable to meet our goal, any funds that are contributed will still go towards the project and we will still go ahead with JACüTERie, but will be limited as to what kinds of products we can offer initially.  But we are GOING to make this happen!  

The Impact

JACüTERIE will bring some of the finest quality Hand Crafted Dried Sausages and other Fine Cured Meats to the Hudson Valley region of New York and beyond - all locally and sustainable created.  This is something that simply does not exist at the moment in the area.  Those who help will get to have a part in the community of local farmers that provide the best of the best to the area.  Those who aren't in the region will also benefit by helping us get the certification we need so we can ship products to those people in other states.  

The more local farms we have the less we have to depend on the big factory farms that brought about the demise of traditional food items.
