What is the difference between 30FPS and 60FPS, what can I do with this feature?
For sports and action videos, 60Frame Per Second videos are much smoother, and you can get 2x slow motion video with the footage.
What is Stacked and DOL HDR, why the Alpha3's sensor IMX577 is better than GoPro's IMX277 and DJI Osmo Action's IMX377?
IMX577 is Sony's new generation Exmor RS Cmos sensor, Exmor R IMX277 & 377 are old sensors which are not stacked and there is no DOL HDR.

Why Alpha3 is more advanced than GoPro 7 and DJI Action?
Mokacam α3: H22+IMX577. Next Generation DOL HDR at all resolutions up to 4K 60fps video, HDR video can be used with electronic stabilization simultaneously.

How is image stabilization done? Is there a gyro sensor, or is part of video frame cut off via EIS?
The image stabilization is provided by both gyro sensor and the image processor to cut part of the frames, it is called EIS.
Gopro have their Hypersmooth which is pretty good. Osmo Action has Rocksteady which appears better again. Where would you place the image stabilization of the Alpha 3 compared to these other two cameras please?
GoPro/Osmo Action, no matter what name they call it, the stabilization is Electronic Image Stabilization, which relies on the imager processor to cut the edge of the original image that the sensor gets during the filming. So the computing power is a key to get better performance. As you can see in the campaign page, the 1.2GHz Quad-Core H22 is industry leading, even more powerful than 1.0Ghz H2 on Osmo Action.
Regarding HDR, GoPro Hero 7 Black only supports HDR in photo mode, DJI Osmo Action's HDR video conflicts with their stabilization. How about Alpha 3? Can we get HDR video with stabilization?
Alpha3's HDR is available for all video resolutions and there is no conflict with stabilization. So you can get HDR video and stabilization simultaneously.
