Our
Story
Sami's is a family owned and operated
Lebanese inspired restaurant business. Currently we only have one outdoor
location, nicknamed the "Trailer". We started our business in 1979 in
the Longwood Medical Area, located in Boston, MA. Over the years we've had
numerous locations throughout the city. However, due to many factors, we've
dwindled down to just the one location.
Originally run by Ghazi "Big
Sam/Sami" Saba, it is now run by myself, Jihad "Jou-jou" Saba,
his daughter. My goal is to revive the business back to its former glory and
eventually become a chain. The first step is to obtain a 2nd location.
Currently we don't have our own commissary
to cook and prepare our food. My brother Sami Saba has his own restaurant which
he lets us use. Now it's time again to have our own commissary.
Our
Goal
We are in the process of obtaining an
indoor location in Dedham, MA. It is a stand alone building with some parking.
This building will become our headquarters essentially. Due to regulations we
will be using most of the space as a kitchen, limiting seating capacity to 10
seats. However, this will still be an improvement to the Trailer, which is
outdoors and has no seating.
Once this shop is operational we will be
able to increase our productivity. We will be offering a full service catering
service as well as packaging foods for local markets. In addition, this
location will offer delivery.
Another perk about opening this location
will be the ability to train more employees. Having a larger staff will allow
us to open the Trailer much longer. Currently the hours are Monday - Friday
6:00 am - 2:30 pm. With more employees we will open 7 days a week and extend
hours until late evening (8-9 pm).
Our Needs
We need to raise enough money to pay for all necessary renovations to convert this building (previously a convenience store) into a restaurant. The funds will also be used for rent, salaries, training, and required permits/licenses.
