My name is Filaretos Psimmenos. Ten years ago, together with my wife, Marianna, we created AMANITA Guesthouse on Pelion. Pelion is a mountainous peninsula in central Greece, washed by the Aegean Sea. It is a unique corner of Greece, unspoiled from mass-tourism. Our guesthouse is situated in the village of Tsagarada, on the eastern slopes of the mountain in a truly privileged location between mountain and sea.

Ο Ξενώνας ΑΜΑΝΙΤΑ αποτελεί ιδανικό προορισμό για ξεκούραση και αποτοξίνωση από τους ρυθμούς της σύγχρονης ζωής, σε περιβάλλον υψηλής αισθητικής με ζεστή ατμόσφαιρα και προσωπική φροντίδα. Τα κτήρια του ξενώνα βρίσκονται μέσα σε ένα βιολογικά καλλιεργούμενο κτήμα, που περιλαμβάνει κήπο με βότανα, οπωρώνα και βιολογικό περιβόλι. Οι φιλοξενούμενοι μας έχουν εύκολη πρόσβαση σε μερικές από τις ομορφότερες παραλίες του Αιγαίου, και μπορούν να πάρουν μέρος μαζί μας σε θεματικές δραστηριότητες στη φύση με γαστρονομική κατάληξη, όπως πεζοπορίες, περιπάτους, συλλογή καρπών και άγριων βοτάνων, κυνήγι μανιταριών ή σε μαθήματα μαγειρικής και εργαστήρια σχετικά με τα Πηλιορείτικα βότανα και τη χρήση τους στη θεραπεία και την κουζίνα. Το βραβευμένο πρωινό μας αξιοποιεί τα βιολογικά λαχανικά και φρούτα από το περιβόλι μας και τα προϊόντα μικρών τοπικών παραγωγών.
For more than 10 years now, we make efforts to reveal and creatively use the culinary culture of our area. During this journey we collected lots of information, recipes, experiences and stories that we happily share with our guests. It was their enthusiasm about this material that inspired us to write it down. They helped us realize, that it is much more than just a bunch of recipes. It is about preserving culinary culture, paying tribute to our families’ story, looking at the ways people in the area survived and developed relying on locally available resources. We created a book of 
150 pages titled “The culinary curiosity of a hotelier” with 34 stories and 63 recipes, combining past and present, mountain and sea, the vegetable and the herb garden and ending up around a table full of goodies in our courtyard – like every greek feast does. Today we are reaching out to you, so that we may publish this book, in two versions – a greek and an English one. Help us preserve the culinary heritage of our region and share the experience of living in this unique place with people all over the world.
μοιραζόμαστε με τους επισκέπτες μας. Το ενδιαφέρον και ο ενθουσιασμός τους για το υλικό αυτό, μας έδωσαν το έναυσμα να το καταγράψουμε. Χάρη σ’ αυτούς συνειδητοποιήσαμε, ότι έχουμε στα χέρια μας κάτι πολύ παραπάνω από ένα μάτσο συνταγές. Κάποιες από τις ιστορίες έχουν δημοσιευτεί κατά καιρούς σε σχετικά sites και blogs. Συγκεντρώνοντας και δημοσιοποιώντας μέσω του βιβλίου το υλικό αυτό, βάζουμε ένα λιθαράκι στην προστασία της γαστρονομικής παράδοσης της περιοχής, τιμάμε την ιστορία των οικογενειών μας, δείχνουμε πώς οι άνθρωποι στα χρόνια της φτώχειας επιβίωσαν και εξελίχτηκαν, 
στηριζόμενοι σε ότι παράγονταν στον τόπο τους. Στις 150 σελίδες του βιβλίου με τίτλο ‘οι γαστρονομικές ανησυχίες ενός ξενοδόχου’ υπάρχουν 34 ιστορίες και 63 συνταγές, που ενώνουν το χτες και το σήμερα, το βουνό και τη θάλασσα, το περιβόλι και το βοτανόκηπο και τελειώνουν γύρω από ένα τραπέζι στην αυλή μας. Σήμερα ζητάμε τη βοήθεια σας, για να εκδώσουμε το βιβλίο αυτό σε δύο εκδόσεις – μια στα ελληνικά και μια στα αγγλικά. Θα μπορέσουμε έτσι να μεταφέρουμε την εμπειρία του Πηλίου, την εμπειρία ΑΜΑΝΙΤΑ, ένα ζωντανό κομμάτι της ελληνικής παραδοσιακής γαστρονομίας, σε ανθρώπους από όλο τον κόσμο.
