Fox Tale, A Love Story

At its core Fox Tale Fermentation Project is a love story. It is a passion project turned entrepreneurial dream between two people with the same goals. It represents the love that we have for creating products that reflect ourselves and our communities. There is a story to tell about every aspect, and we want you to be a part of it.

About Us.
Felipe is a professional brewer, with over 7 years of production brewing experience and over a decade of homebrewing experience. Felipe's brewing resume includes Original Pattern Brewing Company (Oakland, CA) as a Production Brewer, Fort Point Beer Company (San Francisco, CA) as a Brewery Technician and R&D Manager, Devil's Canyon Brewing Company (San Carlos, CA) as a Production Brewer and Central Coast Brewing Company (San Luis Obispo) as part of the cellar staff. 

Before entering the beer industry Felipe was in graduate school studying Electrical Engineering, focusing his Master's thesis on building and programming automated homebrewing systems. The cross disciplinary work with creating data-driven, consistent products has shaped long lasting practices that will cary into Fox Tale's creations.

Wendy has spent the past 12 years exploring and experimenting with food to satisfy her desire to make food a healing, enjoyable, and inclusive experience for all. Her own health journey and flavor curiosity led her to study Holistic Nutrition, fermentation, and primarily plant-based cuisine. 

After leading the Superfoods program at the Facebook Headquarters and developing the first fermentation program on campus, along with teaching various nutrition and cooking classes throughout the Bay Area, Wendy wants to make these specialty food items more accessible to everyone, and grow opportunity for others to love such enriching flavors.

We are a business based on the passion and exploration of unique small batch specialty Beers, Fermented Foods, and Beyond. In a literal sense, we offer:

• Explorative beers, created from locally sourced ingredients, or ingredients from other unique opportunities and relationships such as mulberry juice from The Philippines, or juniper from Mt. Shasta.

• Sonic Bloom - Our award-winning West Coast IPA, bursting with mixed berry and fruit punch aromatics 
• Tundra - An incredibly refreshing Nordic Style Ale brewed with Mt. Shasta Juniper Berries, Tahoma, Polaris and Motueka hops
• Drink Cultura - A Heritage Lager brewed with local grain from Admiral Malting and Malted Blue Corn. 
• Bioluminescence - A White Stout brewed with blueberry reduction and conditioned on organic cacao nibs

• We will always ensure non-alcoholic options. House brewed Kombucha, natural tea sodas, tonics, and N/A beers ahead!

In-house Lacto-Fermented foods!!

• We will be doubling as a Fermented Food Production Business!! Come to us for all of your sauerkraut, pickle, kimchi, and beyond needs. Don't forget about our (someday world-famous) fermented michelada mix. All made with seasonal and local ingredients.

So, What's Happening Is...

WE HAVE A PRODUCTION AND TAPROOM SPACE!

Our facility will be located in the heart of Downtown San Jose, housing a 2 bbl nano brewery and fermented foods kitchen. We will be producing small batch beers and food items available for you to take home, as well as the option to purchase online. Once we are able to open the doors to the public we will have a cozy, intimate taproom for you to come reunite with the friends you've missed so dearly.  We are in the midst of finalizing building details, placing equipment orders, and getting the facility set up. We cannot wait to share all of our hard work with you! 

Where do You come in?

While we are set in our location, we still need support from our community to become fully secure in this process.  With your help we will be able to:

Purchase a new grain mill

Purchase additional fermentors

Upgrade our laboratory equipment

Upgrade food fermentation equipment

Ensuring funding for utilities, insurance and permit fees prior to our grand opening

Help support the local artists involved in the creative process and design of our facility

Your contribution will be a major piece of what brings this project to life. Additionally, your support in our business will help promote growth for other local artists and vendors wishing to display their art, or host pop-ups at Fox Tale. San Jose is coming back to life after a long, difficult year and we want to help in providing new beginnings for our beloved downtown.

Future Vision for Community Endeavors 

Monthly Rotating Art Installations: showcasing work by various artists or organizations, with open houses and displays for our local talent. 

Rotating Artist Beer Labels: We want to share your work. We want to be a piece of the process of helping your talents be seen. And we want everything we make to have a story and a personality behind it. Creators- Let's talk!

The Giving Beer: One house beer will be created as the rotating source of donations for various charities or non-profit organizations in the area. A certain percentage of all sales will be donated directly to the chosen group, with an opportunity for patrons to learn more about the organization’s work and how they can offer support.

Risks & Challenges

Right now is not an easy time to start a business. There are always risks and challenges and we know full well that hardships, struggles, and obstacles may stand in the way of success. We recognize that the economy might not readily, or easily support a new business. We understand that folks don't have the resources that they might have had at the beginning of last year. 

But we believe in our community, we believe in ourselves, and we believe in the possibilities ahead. We intend on being a business dedicated to the well being of others. We will be an ally to those around us in need of help. We will lift up those around us so that our success encourages their success.

And we believe that beer and food will always bring people together.
