I have spent the past year and a half scouting locations throughout Pennsylvania and Delaware in search of just the right spot and have found it in the community of Hockessin, Delaware. The location is the former home of Lake’s Country Store, a fixture in Hockessin. The charm of this historic property is perfect for the location of Goat Kitchen & Bar.
Goat Kitchen & Bar will be your local “come as you are” restaurant. Perfect for a Monday post-yoga lunch, a Tuesday I-don’t-feel-like-cooking pizza, a Wednesday date night bottle of wine, a Thursday post-rugby practice beer, a Friday after work happy hour, a Saturday lunch with the family, and a Sunday stay-in-your-pajamas brunch. There will be some old favorites, some new twists, and a changing menu using the finest, local, seasonal ingredients. The vibe will be casual, the service a study in nonchalance, and the food uncompromisingly delicious.
BIO
My name is David Weir. I was the executive chef and partner of a multiple concept restaurant group and supervised the start-ups of five locations based in Pennsylvania & Delaware with over 8 million dollars in annual sales—including my flagship location, Buckley’s Tavern, where I increased sales from $300,000 to $3.5 million. In my 20+ years at Buckley’s Tavern, I created a sense of community and a “come as you are” atmosphere that turned Buckley’s into the de facto “town hall” of northern Delaware.
My creative, but accessible, food received praise from Bon Appetit, Family Circle, New York Times, Washington Post, Gourmet and several local publications. I come from a long line of Irish bar owners who have instilled in me the secret of a successful bar: great food, friendly service, fair prices, and strong drinks. This will be the Goat Kitchen & Bar.
CULTURE
I believe that it is every business’ responsibility to become an active part of its local community. At my previous restaurants, I prioritized supporting local charities and organizations with events like "Turning the Tables," an event that raised money for Sojourner’s Place and S.C.A.N. I created a 5K race, “4 Pete’s Sake 5K,” for one of our associates battling leukemia. I actively participated and sponsored events such as the annual Brandywine River Clean up, Laurels Tree Planting, Festival of Trees benefiting Delaware Hospice, and even ABC’s Extreme House Makeover.
My goal for Goat Kitchen & Bar is to give our guests and associates the opportunity to help us during monthly sponsored events to help our community and have a great time doing it.
