WHO IS AMBROSIA PASTRY CO?

  • Aura Hertzog and Timothy Simpson are Ambrosia Pastry Co.  We are a small Pastry Co in Waterloo.  We opened a year ago and one of our products was making chocolate from scratch.  We have grown so passionate about sourcing beans from around the world and making chocolate bars from them. 
  • Every Bar we make is a single origin bar and each one has flavours unique to the area where the beans were grown.   We keep it simple, cocoa beans, sugar and sometimes a little milk!  
  • We currently do everything by hand including tempering the chocolate. 
  • In order for us to continue to make chocolate and make it a viable and sustainable business we need to invest in a tempering machine.  We have researched the options and like most commercial food equipment, is above our current means.  
  • By reaching our goal we will be able to purchase a machine that we could make a lot of tempered chocolate with and eventually train someone to use and help with the business.

We Need a Tempering Machine

  • We currently temper all of our chocolate  by hand.  Having a machine to help will increase our efficiency  and productivity. 
  • We love that our chocolate is unique and represents the countries where the beans are grown.  We want everyone to try it and our perks include our bean to bar chocolate.   
  • If we don't reach our goal we will use the money to invest in our chocolate production in any way that will help us.  

The Impact

  • We buy Fair Trade and Organic beans from small scale  farms in the southern hemisphere.  The education around chocolate is increasing and like other commodities it is important that we support sustainable business models  that benefit the communities where they operate,  
  • We are a husband and wife team supporting a young family in a small community.
  •  We are passionate about real food and creating a beautiful product that can be appreciated and enjoyed by everyone near and far.
